Tomato and Thyme Fish

Takes 20 minutes, serves 4
You’ll find this the simplest of sauces. It’s low in saturated fat and salt, and works really well with chicken and shrimps too.
  • Coconut oil or butter- 1 tbsp
  • Onion- 1 chopped
  • Tomatoes- 400 grams chopped
  • Thyme- a few fresh sprigs
  • Tamari soy sauce- 1 tbsp
  • White fish like Mahi Mahi from GOURMET- 4 fillets
  1. Heat the oil in the frying pan, add the onion then fry for 5-8 minutes until lightly browned. Stir in the tomatoes, thyme and soy sauce, then bring to a boil.
  2. Simmer for 5 minutes, then carefully slip the fish into the sauce. Cover and gently cook for 8-10 minutes until the fish flakes easily. Serve with baked/steamed vegetables or sweet potato.
