Shakshouka

Ingredients:
  • 1 large diced tomato
  • 2 tbsp tomato paste
  • 4-5 eggs
  • 2 garlic cloves
  • 1 medium onion, diced
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt & pepper
  • 1 tbsp extra virgin olive oil
Instructions:
  1. Heat your cast iron pan or skillet.
  2. Add olive oi, garlic and onions, sauté until softened.
  3. Add tomatoes & tomato paste and spices, let simmer for 10 minutes.
  4. Using a wooden spoon, make 4-5 wells in your tomato mixture.
  5. Crack your eggs into the wells (we crack each eggs into a small bowl first in case of any shells, then pour into the wells one by one)
  6. Cover and cook for 8-10 minutes, depending on how runny you like your eggs
  7. Garnish with chili flakes, fresh herbs, avocado
