Salmon Tray Bake

Not only healthy, delicious and fast, the flavors of the salmon, potatoes and green beans / asparagus come together beautifully to make a dish worth revisiting regularly!
  • Salmon fillets- 4
  • Baby Potatoes- 650 grams
  • Olive oil- 3 tablespoons
  • Green beans or asparagus
  • Red onion- 1, cut inti wedges
  • Cherry tomatoes- 250 grams
  • Fresh rosemary- 2 sprigs
  • Balsamic vinegar- 2 tablespoons
  • Salt and black pepper
  1. Preheat the oven.
  2. Put the potatoes and oil in a baking tray and toss to combine. Season well with salt and pepper and bake for 15 minutes until slightly golden. Add the onion, tomatoes, rosemary and balsamic vinegar, combine and bake for another 10 minutes.
  3. Season the salmon fillets and add to the tray of vegetables together with the green beans / asparagus and cook for a final 10-12 minutes, until the salmon is just cooked. Serve immediately.
