Bircher Muesli With Dried Apricots & Almonds

Ingredients:
  • 1/2 cup rolled oats (gluten-free if necessary)
  • 1 tsp chia seeds
  • 4-5 dried apricots, chopped (or about 2 tablespoons of your favorite dried fruit)
  • 2 tbsp toasted almonds, chopped (or your favorite nut or seed)
Instructions:
  1. Combine all ingredients in an airtight jar or sealable container.
  2. The night before you plan to have breakfast, soak the mixture in 1 cup unsweetened almond milk or low fat yogurt. Shake it up and place in the refrigerator overnight or for at least 6 hours.
  3. In the morning add additional almond milk to give it more of a cereal consistency or eat as is.
  1. Add 1/2 cup fresh blueberries (or fruit of choice) before serving
  1. Top with 1 tsp manuka honey (or regular honey, agave syrup or maple syrup)
  2. Additional 1 tbsp add-ins: pumpkin seeds, walnuts, pecans, sliced almonds, wheat germ, grated apple, dried cherries, mashed banana, cinnamon, toasted coconut, sesame seeds, dates, raisins.
